Pound cake with rum

If a vanilla and lemon scented pound cake isn’t enough, the rum adds an exciting flavor.

Warning: This cake is so rich, dense and flavorful that I guarantee you will be coming back for slice after slice.

My mom used to make this for her gatherings with friends or family - of course the kids didn’t get the rum version but a light orange juice syrup.
Some of my childhood memories of this bread are mostly tied with groups of people at home. You see, my family’s house turned out to be the center for all family gatherings. Grandparents from my mom’s side of the family, uncles, aunts, cousins, friends and neighbors would all show up whenever my mom and dad had a party and cooked. My dad was also an excellent cook by the way!

Pound cake with rum

1 1/2 cups of flour
2 teaspoon baking soda
1 pinch of salt
1 cup of sugar
125 grams of butter
8 eggs
1 teaspoon vanilla extract
1 tablespoon grated lemon rind
1/2 cup dark rum or cognac

Grease and flour your baking pan. Shake out any excess flour and set aside.
Separate the eggs white and yolks, set aside.
Mix the flour, baking soda and the salt. Sift this mixture a couple of times.
Melt the butter and cool it to room temperature, set aside.
Using a mixing bowl, place the egg whites and whip them until stiff peaks form. Keep mixing and add the egg yolks one at a time until blended. Continue mixing and add the sugar a spoonful at a time followed by the flour little by little until completely blended.

Add the melted butter to the batter, then the vanilla extract and the lemon rind. Finish mixing until you have a smooth, uniform batter.
Pour batter into prepared pan, smoothing the top.
Bake in the oven at 350F for an hour. Test with a wooden skewer for doneness.
Take it out of the oven and let it cool for 20 minutes before taking it out of the mold.
Pour half a cup of dark rum or cognac evenly over the whole cake.

For an alcohol free option, you can use a cup of orange juice, reduce it so it becomes slightly thicker and pour over the cake.
